Noodle Soup a life saver

Noodle soup is a classic dish of all time for families and a big lifesaver when you can’t think of anything at all that your family will eat especially if they picky eater. It will be ready in very short time with most of the ingredients in your pantry.  The best part it is loaded with herbs and nutrients that you want your family to have in a healthy way. There is definitely something about this soup that makes people nostalgic. For sure your family will help yourselves to seconds and thirds servings because it is simply delish.

Ingredients                                                                              Yields: 11 cups

·         2 tbsp butter (Unsalted)

·         1 cup carrots (Peeled and sliced into circles)

·         1 cup celery (Thinly sliced)

·         ¾ cup onions (Finely chopped)

·         1 tbsp ginger (Finely chopped)

·         1 tbsp garlic (Finely chopped)

·         7.5 cups chicken broth

·         ½ tsp thyme (Dried)

·         ½ tsp oregano (Dried)

·         1 bay leaf

·         Salt and pepper to taste

·         12 ounces egg noodles

·         1.5 cups chicken (Shredded or cut into cubes/ thin slices)

·         2 tbsp parsley (Fresh, Finely chopped)

·         1 tbsp parsley or green onions or thyme (Fresh, For garnish)

Instructions

1.     In a large stockpot, heat butter over medium-high heat.

 

2.     Add carrots, celery, onions and sauté everything until the veggies become slightly tender.

 

3.     Add ginger, garlic and sauté them for 1-2 minutes, making sure not to burn them.

4.     Add broth, thyme, oregano, bay leaf, salt, pepper and bring everything to a boil.

 

5.     Let it cook for another 5 minutes.

 

6.     Add egg noodles and let it all cook for about 10 minutes or until the noodles become soft.

 

7.     Add chicken and parsley and cook for another 3 minutes.

 

8.     Check the flavor to see if you need to add more herbs or spices.

 

9.     Discard the bay leaf and garnish with some fresh parsley or thyme or green onions and enjoy!
